Healthy Bread in 5 Minutes a Day


I recently got the cook book Healthy Bread in 5 Minutes a Day because I LOVE their first cook book- Artisan Bread in 5 Minutes a Day but always wished there were more healthy recipes in it that I could feel good about eating all the time (b/c believe me, you want to eat this bread all.the.time!).  So far I have made 2 of the doughs from the cookbook & both have been yummy.  I look forward to trying out more, especially now that I have new containers to store the dough in with a hole drilled in the lid for the gasses to excape (thanks to Mike!).  For those of you who are not familiar with this bread, it is a very moist dough that you mix up (no kneading), store in your fridge in large quantities, & then cook in a hot moist oven.  There is minimal effort (mixing the ingredients just one time with enough dough to make 4-6 loaves of bread) & just time needed for rising & cooking.  I highly recommend both books!

Playing Together

Jackson is finally getting to the age where Isabella can play with him & they have lots of fun together. Sometimes Isabella tries to control Jackson a bit too much & we hear him fussing... but there are lots of laughs & giggles inbetween. :)

Things have been so crazy busy around here that I haven't had time to sit down & upload Jackson's 10 month pictures! We have decided to put our house on the market to buy something with land & so we've been consumed with household repairs, cleaning, & decluttering!
As you might notice, our 10 month pics were not taken on the 30th of February. Not having a 30th in that month threw me & so we didn't get pics taken until a few days later.
This month has been a BIG month for Jackson, full of lots of advances!
*He started crawling this month with a modified one knee one foot crawl (maybe to compensate for the slippery floors?).
*Jackson is out of his swaddle blanket (except when we just wrap it around his body w/ arms out just for warmth) & we don't have to hold his arms down til he falls asleep either (which was the first step after getting his arms out of the swaddle!). It was a long process of breaking him of it & we're happy to be done with it!
*He started giving sweet open mouth kisses. He'll give them sometimes when you ask but sometimes won't. He will aslo give the babies in his books kisses and of course his sister. :)
*He has said "yay" while clapping & what sounds like "hieeee" a couple times.
*His third & fourth tooth came in this month (the upper teeth on either side of where his front 2 teeth will be)
*He waves bye-bye (as well as hi)

Jackson is a super good eater & makes this "uh uh uh" noise when he is ready for another bite (a very impatient sound, btw). He has tried a bunch of things this month including egg yolks, beans, yogurt, orange, broccoli, cheese, & chicken. He is STILL nursing 2x a night & I believe this is because he is a very distracted nurser during the day in addition to him just being accustomed to being hungry & eating at night. Will need to work on this so I can finally get some uninterupted sleep!
Unfortunately he has been sick again this past month... it seems like he isn't well for very long before he catches the next cold. It is miserable for him when he is sick & can't breathe while he is sleeping... and then of course I sleep even less than usual! Thankfully he is well now & I am anxious for the cold/flu season to be over before he catches another!

Looking forward to what the next month brings as we inch closer and closer to his very first birthday!!!
